Vegetarian French Onion Soup is delicious, elegant, and surprisingly easy to prepare.

This is a vegan twist on the classic French onion soup, the main difference being that I use vegetable broth instead of beef broth.

With just six ingredients and a little patience (no interference) while the onions caramelize, you’ll wonder why you didn’t make this years ago to use whatever onions you have sitting on your counter.

In these cold winter months, there is no better way to stay warm than with a warm bowl of hot soup.

Aside from being delicious, this vegetarian French onion soup recipe has both nourishing and healing properties.

Try it; You’ll be shocked at how much it tastes like the original. I prefer a little white or yellow onion in this soup.

However, you can use any batch of onions you have on hand – they all turn sweet when cooked and caramelized.

The working time for this recipe is really limited; Most of the time spent on the stove is spent without your help.

  • 2 tablespoons Extra virgin olive oil
  • 3 Large white or yellow onion, sliced ​​into thin halves
  • 3 large fresh thyme sprigs (about 1 tablespoon), stripped leaves, or ½ teaspoon dry
  • 4 cups (1 liter) vegetable broth/broth (no added salt), or (if not vegetarian) beef broth or chicken broth)*
  • 2 cups of filtered water
  • 1 bay leaf
  • 2 tablespoons Good quality old balsamic vinegar
  • 3 teaspoons sea ​​salt, divided (plus more to taste if needed)
  • Half a teaspoon Freshly ground black pepper

(Non-vegetarian version):

  • Shredded Gruyere or Swiss cheese (obviously not vegan!) melt over French onion soup if you’re “flexible”

  1. Heat 1 tablespoon olive oil over medium heat in a large soup pot or Dutch oven.
  2. Add the onion, thyme and 1 teaspoon salt and sprinkle 1 tablespoon olive oil over the onions. Reduce the heat to medium low. The onions may fill the pot completely, but they will cook to half of their mass.
  3. Cook, uncovered, stirring occasionally, until onions are caramelized and light golden brown, about 50-60 minutes.
  4. Add the balsamic and cook until absorbed and the onions are darker brown, about another 15 minutes.
  5. Add the broth, water, bay leaf, remaining salt and pepper, then bring to a boil.
  6. Bring to a simmer and let it simmer for at least 30 minutes.
  7. Remove the bay leaf before serving.
  8. I usually eat it just like this, but you can also serve it with toast and melted cheese for a more classic presentation (adding cheese of course makes it non-vegetarian). Instead of cheese bread on soup, put slices of sprouted grain bread on a baking sheet, rub the surface with a piece of fresh garlic, drizzle a little olive oil, and top with Gruyere cheese. Bake for 10 minutes at 350ºC until the cheese has melted. Put a slice of bread with cheese on top of each soup cup and serve.
  9. This soup (without cheese and bread) freezes well in an airtight glass jar.
  10. Tip: You can also substitute 1/4 cup of high-quality dark red wine with balsamic vinegar. I suggest using a burgundy sauvignon or cabernet if you want to use wine instead of balsamic vinegar.


*A note on stock selection: This recipe is vegan so I use vegetable broth. I’ve included these alternatives if making them vegan isn’t important to you:

  • (Non-Vegetarian Options) Beef broth is traditional in French onion soup and has a deep, earthy flavour. Chicken broth is also a great option here if you prefer it. When choosing beef or chicken broth, I suggest high-quality stock (preferably organic) that doesn’t have added preservatives or extra sodium. (I love the brands Pacific, 365 from Whole Foods and Kirkland from Costco.) You can also use our homemade chicken stock recipe (also known as bone broth) or store-bought bone broth to make this soup for added protein and healing properties.
